Orange and Pineapple Salad with Fennel

It's that time of year - salad time! Well, any time of year is salad time in my book, but spring is especially nice for fresh greens and fruit. This one is equally suited for a family table or a potluck. 

Ingredients: 

3 cups salad greens
3 oranges, peeled and sectioned, each section cut in half, catching any juices
1/4 pineapple, cubed
1/2 fennel, shaved thin with a knife or mandoline
1/4 cup pistachios
1/4 cup orange dressing

Directions: 

Strew the salad greens on a large platter. Top with the orange slices, pineapple, and fennel. Lightly mix the greens and fruit. Drizzle any orange juice on top of the salad. Sprinkle with pistachios. Enjoy!

Serves 4 generously, 8 or more for a potluck


Stealthy Cooking Tip: Drizzling the leftover juices tricks the palette into thinking there's more dressing than there really is! Healthy and delicious, too!
