Pomegranate Salad Dressing

I had the good fortune to visit friends who have pomegranates growing on their property. They have enough trees to call their own orchard! They gave me several of their homegrown pomegranates, so I've been using them for all sorts of things. My favorite is still using the seeds, called arils, in salads. However, I may have a new favorite. This salad dressing came together easily and is truly delicious. I kept tasting it at intervals and was sure I would need to add lots of ingredients to make it taste good - but surprise! It was so tasty before I started adding extras that I just marveled and stopped right there. This is redolent with the taste of pomegranates, slightly sweet, beautiful deep red color, and just enough brightness to make greens sing!

Ingredients:

2 Tbs pomegranate juice
1 Tbs honey
1 Tbs balsamic vinegar
1/4 cup extra virgin olive oil

Directions:

Cut the pomegranate in half or quarters. Use either a handheld or upright mechanical juicer to extract the juice. My handheld juicer gave me 2 tablespoons of juice from about 1/4 of a pomegranate. Mix the juice together with the remaining ingredients. Whisk or shake to combine. Pour over salad of choice.

Stealthy Cooking Tip: If you love drinking pomegranate juice, just use 2 Tbs of prepared juice. Easy. If you have fresh pomegranates, press the juice out! That's easier than you think!
