Winter Spinach Salad

Here's my go to spinach salad recipe for the winter months. It's definitely a favorite in our house, as it combines the sweet flavors of fruit with the crunch of nuts and the smooth feel of cheese. The flavors and textures add up to an enjoyable salad experience. Add a favorite salad dressing, and it's a winner!

Ingredients:

2 cups baby spinach leaves
1/2 cup sweetened dried cranberries
1/4 cup sliced almonds
2 Tbs crumbled feta cheese
2 Tbs salad dressing

Directions:

Mix all ingredients together. Plate and enjoy!

Serves 2 (can easily be doubled, tripled, or more)

Stealthy Cooking Tip:  A variety of textures creates interest, both visually and taste wise. Also, the colors of this salad create another layer of visual interest - the green background with red and white punctuation. Attractive foods are always a pleasure to eat! Feel free to use less dressing, but don't add more than 1 Tbs per person.
