Endive Bites

This salad takes eating by hand to a whole new level. After all, how often do you get to eat your salad with your hands? This is also a colorful addition to any plate!


Ingredients:

6 leaves of green endive
3 leaves of red endive
1/2 pear, cored and cut into lengthwise slices
2 tsp blue cheese
2 tsp dried cranberries
2 tsp salad dressing

Directions:  Make 3 stacks of 2 green endive leaves on each salad plate. Top each set of green leaves with one red endive leaf. Add some pear slices, blue cheese, and cranberries. Drizzle the salad leaves with salad dressing. These may be picked up and eaten with your hands.

Serves 2, easily doubled.

Stealthy Cooking Tip: Eat salad with your hands, how fun is that?  Now, this is a fun way to eat. You can certainly change things up to suit your taste. Use another type of cheese or small butter lettuce leaves, whatever suits your palate.
