Smoked Duck (or Salmon) Salad


I had a wonderful salad at Iris in New Orleans. This is my version of it. It combines savory smoked meat with sweet blueberries and a mouthpopping blue cheese. Topped with sweet jelly vinaigrette, it's a summertime delight. With all cold ingredients, it's a nice treat to make as well as to eat on these hot summer evenings.

Ingredients:

3 cups of mixed baby greens
1/2 cup blueberries
1/4 cup chopped pecans
1/4 cup gorgonzola cheese
5 oz. sliced smoked duck or salmon
2 Tbs Mayhaw or jelly vinaigrette


Directions:

Wash salad greens and divide between two plates. Top each salad with half of the blueberries, pecans, gorgonzola, and smoked duck or salmon. Drizzle each salad with 1 tablespoon of the vinaigrette. Serve and enjoy.

Serves 2, easily doubled or more
