Smoked Duck (or Salmon) Salad

I had a wonderful salad at Iris in New Orleans. This is my version of it. It combines savory smoked meat with sweet blueberries and a mouthpopping blue cheese. Topped with sweet jelly vinaigrette, it's a summertime delight. With all cold ingredients, it's a nice treat to make as well as to eat on these hot summer evenings.

3 cups of mixed baby greens
1/2 cup blueberries
1/4 cup chopped pecans
1/4 cup gorgonzola cheese
5 oz. sliced smoked duck or salmon
2 Tbs Mayhaw or jelly vinaigrette

Wash salad greens and divide between two plates. Top each salad with half of the blueberries, pecans, gorgonzola, and smoked duck or salmon. Drizzle each salad with 1 tablespoon of the vinaigrette. Serve and enjoy.

Serves 2, easily doubled or more

Stealthy Cooking Tip: There are some foods that are best purchased organic. Lettuce and berries are two of those foods. They both maintain a residue of insecticide that can be scrubbed off ... but have you ever tried to scrub lettuce or berries? Yes, these are two that are best purchased organic!
