Avocado and Mango Salad with Hazelnuts


There is definitely something about hot and spicy food that seems to take the heat out of the summer. The spicy heat seems refreshing, somehow. Here's a salad that combines both. It's refreshing, yet spicy.

Ingredients:

4 cups mixed salad greens
1 avocado
1 mango
4 tsp hazelnuts
4 tsp jalapeno lime dressing

For the dressing:

zest of one lime
2 Tbs lime juice (juice of one lime)
1 Tbs jalapeno jelly
3 Tbs extra virgin olive oil
a grind of sea salt
several grinds of pepper


Directions:

To make the dressing, combine all ingredients together in a jar. Shake before serving. Cut the avocado in half lengthwise. Remove the seed and peel. Slice lengthwise. Slice off the four long sides of the mango. leaving the pit behind. Slice each lengthwise into strips, then cut away the peel, leaving edible mango strips. Place 1 cup of greens on each salad plate. Top with 1/4 of the avocado and mango strips, 1 tsp of the hazelnuts, and 1 tsp of the dressing.

Stealthy Cooking Tip: Don't be afraid of avocados! Sure, they have fat. But, the fat in an avocado is the unsaturated kind of fat, the kind that helps you absorb necessary nutrients. Eat and enjoy your avocado, in moderation, of course!
