BLT Salad


I love Bacon, Lettuce, and Tomato sandwiches. But, I don't like sandwich bread very much. Here's the way I enjoy my BLT sandwich without bread!

Ingredients:

4 cups mixed lettuce greens
2 pieces bacon, cut into 1/2 inch pieces
1 cup cherry tomatoes
1/2 cup croutons
1/2 cup fresh mozzarella cubes
1 Tbs balsamic vinaigrette

Directions:  Mix all the ingredients together, then serve.


Serves 2

Stealthy Cooking Tip: This uses croutons in place of bread. You can make your own croutons by cubing two slices of whole wheat bread, then baking the cubes in a 350 degree oven for 10 minutes, stirring after 5 minutes. Home made croutons have less salt than pre-made ones, plus you can use your favorite bread. The cubed croutons in this photo are of jalapeno cornbread.
