Watermelon Cooler

Get ready for summer! Here's a drink that will cool you off quite nicely, thank you very much. If it's too hot for this to work, try the enhanced version. Add a shot of tequila and you won't care how hot it is.

Ingredients:

1/2 cup water
6 cups cubes seedless watermelon
1/4 cup lemon or lime juice
3 Tbs. agave nectar
12 mint leaves
4 slices of lemon or lime
4 shots of tequila (optional)

Directions:

Pour the water into a blender. Add the watermelon, lemon or lime juice, and the agave nectar. Blend until the watermelon is pureed. Pour over ice cubes, adding 3 mint leaves to each cup. Garnish the cups with lemon or lime slices. Add tequila if desired.

Serves 4

Stealthy Cooking Tip: Watermelon sneaks in all kinds of healthy nutrients. Packed along with vitamins C and A is lycopene, along with a healthy dose of fiber. You may already know a lot about vitamins and fiber, but lycopene is a powerful antioxidant. Antioxidants stop free radicals from damaging your immune system. And, just one cup of watermelon has 6 milligrams of lycopene, compare that to the 4 milligrams typically found in one tomato. So, enjoy your watermelon - either cut up as a fruit, or in a juicy drink.
